Ingredients
- 130 grams white cornmeal
- 140 grams all-purpose flour
- 55 grams sugar
- 13 grams baking powder
- 10 grams kosher salt
- 114 grams eggs
- 70 grams vegetable oil, plus more for oiling the pan
- 284 grams low-fat buttermilk
Instructions
- Preheat oven 200c w heavy pan for 30mins
- Sieve dry ingredients
- Mix wet ingredients
- Fold wet into dry until it just comes together
- Add batter to pan and cook for 25 minutes or until golden brown
- Look for an interior temp of 93c
