Lamb, apricot and pumpkin tagine

Instructions

  1. Mix lamb, veg and spices in large bowl to combine
  2. Cook over high heat fro 3-4 minutes
  3. Add ½ cup of water to bowl to rinse out leftover spices and add to tagine
  4. Cover and cook over low head for 1-1.5hrs
  5. Add pumpkin and apricots, cook until just tender ~45mins
  6. Mix in almonds and parsley, stir, serve with couscous and topped with pomegranate seeds
