Lamb, apricot and pumpkin tagine
Notes
Ingredients
- 1 red onion, large dice
- 1 red capsicum, large dice
- 1 large rip tomato
- 700g lamb leg, cut into chunks
- 2 cloves minced garlic
- 3 tspns ground cumin
- 1 tspns ground corriander
- 4 tspns paprika
- 2 tspns turmeric
- pinch chilli powder
- 1 tspn ground black pepper
- 2 tspns salt
- ~200g pumpkin chopped
- ~100g apricots/dates
- 1/2 cup chopped flat-leaf parsley
- Toasted slivered almonds
Instructions
- Mix lamb, veg and spices in large bowl to combine
- Cook over high heat fro 3-4 minutes
- Add ½ cup of water to bowl to rinse out leftover spices and add to tagine
- Cover and cook over low head for 1-1.5hrs
- Add pumpkin and apricots, cook until just tender ~45mins
- Mix in almonds and parsley, stir, serve with couscous and topped with pomegranate seeds
