Makes 14 buns
Ingredients
- 360g all-purpose plain flour, plus extra for dusting
- 20g skim-milk powder
- 4g baking powder
- 5g instant dry yeast
- 35g white sugar
- 35g sesame oil, plus extra for greasing the dough
- 200g warm water
- 14 squares of baking paper
Instructions
- Mix flour, milk powder, baking powder, yeast, sugar
- Pour in water and oil, knead in dough mixer
- Return to bowl, cover and rest for 90 minutes or double in size
- Punch down dough
- Roll out to 1cm thick
- Cut 8cm circles with a pastry cutter
- Wipe dough with oil, stretch slightly then fold
- Place on a square of baking paper
- Cover and prove for 30 minutes
- Steam in bamboo steamer basket for 12 minutes
- Allow to rest for 2-3 minutes
