2kg pork shoulder, clean and sliced into 1" slabs across the grain
2 onions, diced
1 capsicum, diced
4 garlic cloves, minced
2 tblsp tomato paste
1 tblsp dried oregano
1 tblsp ground cumin
1 tsp cayenne pepper
500ml beef/chix stock
4 thai chilli, diced
2 birdseye chilli, diced
2 400g tins diced tomato
2 400g tins red kidney beans
