Just a place for my old thoughts

Where have we been?

Long time, no post.

Since getting back from our holidays it has just been insane for both of us at work. We're both working on projects that are swinging back and forth. And I think I have committed a political suicide a couple of times so things are just going swimmingly.

On the upside we've ramped up our focus on food at home. Yes, I know, you didn't know that this was possible. But we have been cooking up a storm and creating some amazing dinners. Deb picked up a Donna Hay cookbook at the library and has been cooking some amazing food.

I had Friday off for home maintenance and mental health. I managed to get the car serviced, the gutters cleaned and fitted with gutter guard and the lawn mowed.

I was a real home body over the weekend but had a blast in the kitchen. Friday night was the favourite Creamy Chicken Soup, Saturday was Chinese Chicken. This involves poaching a whole chicken in Asian master stock then letting it fully dry before quickly deep frying the whole bird in very very hot oil. That was served with steamed vegetables and rice.

Sunday Deb and her Mum went shopping so I stayed home and finally christened my sausage making set. So I ground my own mince (this stuff is awesome and kicks shopping centre mince) and then stuffed my own sausages. So after a few hours of work I had 1.25Kg of home made beef sausages with parsley, garlic and sundried tomatoes.

I cooked a test one and the skin broke quite badly so for dinner I grilled them under gentle heat and they worked a treat. Sorry I don't have any pictures of the finished dish. But it was very very good.

...can't help myself, what sort of sausage casing did you use?

I got some collagen sausage casings from the local butcher. Not sure where I would get natural casings, or if I would want to. Didn't realise I wasn't supposed to wet them until after I had wet and used them.

Yeah, yeah, I know, I haven't posted anything since getting back from holidays. But between a trip to Sydney this week and low level jetlag that seems me waking up at 3am and falling asleep at 2pm it has been a mixed week.

I will get a longer post up in the next few days but in the interim I give you this. My old manager at PwC caught up with a Claire, in the picture, and gave her this old photo.

I was so young I find it hard to believe it's me.
